Rib Roast Garlicky Recipe

Ingredients:

  1. 3 tablespoons - garlic minced
  2. 1 tablespoons - kosher salt
  3. 1/2 teaspoons - ground black pepper
  4. 6 pounds - standing rib roast
  5. 6 - bay leaves
  6. 2 cups - red wine or red cooking wine

Directions:

Preparation of Rib Roast:
To remove the top layer of fat in one piece, slice between the meat and the fat with a sharp knife, pulling the fat back with your other hand. Reserve fat to wrap over seasoned roast.

Preheat oven to 450° F.

Mash the garlic, salt and pepper together until it forms a paste. Spread paste over top and sides of roast.

Place the bay leaves on top. Replace the fat strip and secure with string.

Ribs down, place roast in pan. Add wine. Cook for 20 minutes.

Reduce heat to 350° F. Roast for another hour and 40 minutes for medium.

Let sit 10 minutes before carving.
