Ricotta Roll-ups

Ingredients:

  1. 1 pounds - margerine
  2. 4 cups - flour
  3. 2 - egg yolks (reserve whites)
  4. 1 cups - ricotta cheese
  5. 4 cups - chopped nuts
  6. 2 cups - sugar
  7. 2 tablespoons - ricotta cheese (can use 3 T)
  8. 2 teaspoons - cinnamon

Directions:

In a bowl, mix margerine and flour until coarse; add egg yolks; add cheese. Kneed until smooth.
Make 7 balls of dough and wrap each in saran wrap. Refrigerate overnight.
Roll out each ball like a pie shell. Mix nuts, sugar, cheese, and cinnamon together. Spread mixture on dough. Cut into 16 wedges and roll up, large end to center (like a croissant).
Put seam down on cookie sheet. Brush tops with reserved egg whites. Bake at 375° for about 25 minutes or until tops are golden.
