Ingredients:
- 1/4 pounds - butter for cooking
- 1 - onion chopped fine
- 1/2 pounds - mushrooms chopped fine
- 2 tablespoons - minced parsley
- 1 cloves - garlic minced
- 1 1/2 tablespoons - flour
- 1/3 cups - vermouth
- - salt and pepper to taste
- 2 tablespoons - vegetable oil
- 4 - boneless chicken breast halves
- 8 - phyllo sheets
- 1/3 cups - melted butter
- - bread crumbs
Directions:
In a skillet, heat 3 tablespoons butter and saute onion until golden. Set aside.
Heat 3 more tablespoons butter and saute mushrooms until juices evaporate, then add onions, parsley, and garlic and saute a little more. Stir in flour, mixing well and add vermouth. Stir over medium heat until thickened. Season with salt and pepper. Set aside.
In skillet heat remaining butter and vegetable oil and saute breasts one minute on each side. Wrap one breast in phyllo at a time, keeping unused sheets between damp towels. Butter one sheet of phyllo carefully with brush, sprinkle with bread crumbs, cover with another sheet of phyllo and butter again. Place chicken on phyllo sheets and put some of mushroom mixture on top and roll it up like a blintz, tucking in corners.
Butter outside well and bake at 350 degrees F for 35 minutes or until brown.
