Ingredients:
- 5 pounds - potatoes (golden Yukon potatoes are best) cut into chunks
- 1 sticks - butter
- - salt and pepper
- 1/4 cups - diced fresh rosemary
- 1 cups - caramelized onions (OR 1/2 cup diced green onions)
- 10 - white or yellow onions sliced
- 1 sticks - butter
Directions:
Boil potatoes with skins on until tender. Drain off all water.
Add butter, salt and pepper, diced rosemary and onions.
Smash by hand and stir all ingredients until potatoes are chunky and semi-smashed.
Taste to adjust salt and pepper seasonings.
For Caramelized Onions:
Place sliced onions in skillet with stick of butter over low-medium heat. Let cook for about one hour, stirring every 20 minutes or so. Cook until they turn a soft golden brown. Let cool. Bag up in small zip-lock bags in 1/2 to 1 cup portions and freeze, so you'll always have some of these yummy onions on hand for this recipe and others. Simply microwave the frozen package to thaw or set bag in a cup of hot water for a few minutes.
