Ingredients:
- 6 packages - 10 oz. fresh spinach
- 10 slices - whole wheat bread
- 1 heads - garlic (use entire head, not just one clove) peeled, chopped fine
- 2 bunches - green onions sliced thin
- 1 pounds - mushrooms chopped
- 3 tablespoons - oil
- - salt and freshly ground pepper to taste
- 1 tablespoons - dried dillweed OR 3 tablespoons chopped fresh dill
- 2 1/2 teaspoons - dried oregano
- 1 teaspoons - nutmeg
- 1 teaspoons - paprika
- 1 tablespoons - dried mint leaves OR 3 tablespoons chopped fresh mint
- 6 - eggs slightly beaten
- 1/2 cups - grated Parmesan cheese
- - milk if needed
- 4 tablespoons - melted butter
- 1 cups - bread crumbs
Directions:
Heat oven to 350 degrees F. Cook fresh spinach without adding additional water, just until it wilts. Drain, reserving liquid. Moisten bread slices with water, then squeeze out water.
Saute garlic, onions and mushrooms in 2 tablespoons oil until onions soften. Add salt, pepper, dill, oregano, nutmeg, paprika and mint; mix well. Remove from pan.
Heat remaining tablespoon oil; saute spinach in oil briefly. Mix spinach, bread, garlic mixture, eggs and cheese. Add enough milk to spinach juices, if necessary, to make 2 cups. Mix with spinach.
Grease a 3- to 3-1/2 quart shallow baking dish; add spinach mixture.
Mix butter and bread crumbs. Spread over top. Refrigerate if desired.
To serve, return to room temperature. Bake at 350 degrees F 45 to 60 minutes, until mixture is bubbly and hot. Cut into squares and serve.
