Sauteed Parmesan Vegetables

Ingredients:

  1. 1 - zucchini coarsely chopped
  2. 1 - yellow squash coarsely chopped
  3. 1 - red bell pepper seeded and coarsely chopped
  4. 1 - green bell pepper seeded and coarsely chopped
  5. 1 cups - grape tomatoes halved
  6. 2 tablespoons - vegetable oil
  7. 2 tablespoons - reduced-fat italian dressing
  8. 1/4 cups - grated parmesan cheese

Directions:

1. Wash and chop vegetables as indicated above.
2. Heat skillet to medium; add vegetable oil
3. Add zucchini, squash, bell peppers and grape tomatoes and sauté until tender, about 10 minutes; turning occasionally.
4. Place sautéed vegetables in large serving bowl; add dressing and parmesan cheese; mix until evenly coated.
