Scallion Duchesse Potatoes

Ingredients:

  1. 3 pounds - large boiling potatoes
  2. 1 1/2 cups - minced scallions also green parts
  3. 1 cups - milk
  4. 1/2 cups - plain yogurt
  5. 2 - large egg yolks
  6. 1/2 sticks - butter softened
  7. - salt and pepper to taste

Directions:

Cook potatoes and peel.

Combine 1/2 cup of scallions and milk and simmer 15 minutes.

Beat potatoes (hot) and milk mixture, yogurt, egg yolks, butter, and rest of scallions with electric beater until smooth.

Put in buttered dish and bake at 400 degrees F for 20 to 30 minutes.
