Scallop Scampi

Ingredients:

  1. 1 1/2 pounds - bay scallops
  2. 6 tablespoons - butter or margarine divided
  3. 1 cloves - garlic crushed
  4. 2 tablespoons - fresh lemon juice
  5. 2 tablespoons - fresh chopped parsley
  6. 2 tablespoons - seasoned bread crumbs
  7. - paprika

Directions:

Rinse scallops and pat dry with paper towel; set aside.

In skillet over medium heat, melt 3 tablespoons butter. Add garlic; heat 'til butter turns golden brown, approximately 2 minutes. Stir in lemon juice.

Over high heat, add scallops. Cook 3 to 4 minutes, stirring frequently until scallops are creamy-white in color. Drain scallops; discard liquid from skillet.

Place scallops in baking dish; toss with parsley. Sprinkle with bread crumbs and paprika; drizzle with remaining melted butter. Broil 2 minutes or until top is golden brown.
