Shrimp Paesano

Ingredients:

  1. - shrimp
  2. - flour
  3. - olive oil
  4. 3 pounds - unsweetened or regular butter
  5. 6 - lemons, juice only
  6. 13 cloves - garlic about 10-15 cloves, to taste
  7. - parsley
  8. - cilantro

Directions:

FOR SHRIMP:

1) Peel and devein.

2) Dust in flour.

3) Saute in olive oil. Only cook until shrimp are ½ done.

4) Finish in oven @ high heat.

FOR SAUCE:

1) Heat lemon juice on high heat.

2) Add butter small pieces at a time. Keep whisking (very hard) all the time. Do not let butter boil.

3) Add ½ garlic.

4) Keep warm while sauce sits to thicken.

Pour sauce over shrimp. Add the rest of the garlic. Garnish with parsley or cilantro and lemon zest.
