Can be used without skin on, however you will not get that crispy potato chip type of skin that is so wonderful. The skin also helps retain the juices inside the fish. Ideally, salmon cooked this way should be cooked medium. A little pink in the middle is perfect.

Ingredients:
- 1 - skin on salmon fillet cut in 4 inch pieces
- 3 sprigs - fresh dill finely chopped
- 2 - lemons zested
- 1 1/2 tablespoons - EVOO
- - sea salt coarse
- - black pepper fresh cracked
Directions:
Preheat oven to 475. Season fish skin side with salt and pepper. Turn over and season with salt, pepper, 1/2 of the dill and lemon zest in that order. Place on paper towel to dry skin side down. In oven safe skillet on high heat add olive oil. When oil is smoking hot, carefully add salmon to the skillet skin side down as slowly as possible to avoid sticking. Use a spatula and slide it off with a tongs to avoid splatter burns. Move salmon around in pan immediately to keep from sticking. Typically just swirling the skillet around keeps them broken free. As soon as skin starts to appear brown transfer skillet to oven and bake for 9 - 10 minutes. Be careful when removing pan from oven as it will be extremely hot. Pull out of pan and flip over skin side up on serving plate. Salt and pepper once more and add the rest of the fresh dill and lemon zest.
