Soft Pretzel Bites

Ingredients:

  1. 2 1/4 teaspoons - active dry yeast
  2. 2 1/2 tablespoons - granulated sugar
  3. 1 teaspoons - salt
  4. 1 1/2 cups - warm water
  5. 4 cups - flour
  6. 1/4 cups - baking soda
  7. 1 3/4 cups - warm water
  8. - kosher salt
  9. - melted butter for dipping after baking

Directions:

Dissolve yeast, sugar and salt in 1½ cups warm water. Stir in flour. Knead until smooth. Place dough in a well-oiled bowl and turn to coat. Cover and let rise for about an hour.

Preheat oven to 425°F. Turn dough onto floured surface. Pat down and then cut into small pieces.

Dissolve baking soda in 2 cups warm water. Dip dough pieces into baking soda solution. Place pieces on a greased cookie sheet, sprinkle with kosher salt and bake for 8 minutes until golden brown.

Dip each pretzel bite in melted butter after baking.
