Ingredients:
- 2 - apples peeled, diced (best to use Granny Smith)
- 1/3 cups - sugar
- 1/2 teaspoons - cinnamon
- 2 cups - all-purpose flour
- 1/2 cups - shortening
- 1 teaspoons - salt
- 1/2 cups - ice cold water
- 1 1/2 cups - vegetable oil for frying
Directions:
In a medium saucepan cook apples, sugar and cinnamon on low until apples are soft. Remove from heat and mash with fork until it looks like applesauce (if you prefer, you can leave a few chunks).
Meantime, in a separate bowl mix together flour and salt; cut in shortening. Add water and mix until dough comes together to form a ball. Turn out onto a well-floured surface. Roll out to about 1/4-inch thickness.
Cut out a 6-inch circle (may be larger or smaller, as you prefer); I use a saucer to trace the circle with. On each circle, place spoonful of apples in center. Dip your finger in water and moisten the edges of the dough circle. Fold over in half and seal the edges; mash edges with tines of a fork to seal them.
Heat oil over medium-high heat and fry each pie until golden brown, turning only once to brown the other side. Drain on paper towels.
May be sprinkled with powdered sugar while warm or cold.
