Southern Style Field Peas

Ingredients:

  1. 3 quarts - water
  2. 2 quarts - fresh pink-eyed peas
  3. 1 pieces - 12 oz. cured salt pork
  4. 2 tablespoons - salt
  5. 1 tablespoons - sugar
  6. 3 - dried chile peppers
  7. 3 - bay leaves

Directions:

In a large Dutch oven, bring water, peas, salt pork, salt, sugar, chile peppers and bay leaves to a boil over medium-high heat.

Reduce heat to medium and cook, uncovered, until peas are tender, approximately 2 hours.
