Southwest Hominy

Ingredients:

  1. 3 cans - 14 oz. white hominy reserve 1/2 of juice
  2. 1 - medium onion chopped
  3. 1 pounds - bacon fried, crumbled
  4. 1 pounds - cheddar shredded
  5. 1 teaspoons - juice from pickled jalapenos
  6. 1/2 pounds - Velveeta cheese cubed
  7. 2 cans - 4 oz. green chilies

Directions:

1. Heat hominy in reserved juice until boiling.

2. Add jalapeno juice. Remove from heat. Add onion, Velveeta, 1/2 of cheddar, 1/2 of bacon, and 1/2 of green chilies. Let the cheese melt.

3. Spread into a 9-x-12-inch greased pan. Top with remaining cheddar, bacon and green chilies. Serve warm. (Heat in oven a few minutes, if needed).
