Spiced Pork Tenderloin

Ingredients:

  1. 1 teaspoons - coarse salt
  2. 1 cloves - garlic minced
  3. 1/2 teaspoons - white pepper
  4. 1/4 teaspoons - dried thyme
  5. 1 pinchs - ground allspice
  6. 1 - pork tenderloin (12 oz.)
  7. 2 tablespoons - vegetable oil
  8. 1/2 cups - milk (not low-fat)
  9. 1/4 cups - brandy

Directions:

Combine salt, garlic, pepper, thyme and allspice. Rub onto pork. Wrap and refrigerate overnight.

Preheat oven to 325 degrees F. Heat oil in heavy skillet. Brown pork , turning 1 time. Place pork in skillet in oven and bake 30 minutes. Cover and keep warm.

Add milk and brandy to pan and boil, then reduce heat to thicken.

Slice pork and serve with sauce.
