Ingredients:
- 1 pounds - fresh spinach (OR 20 oz. frozen chopped spinach, thawed) barely cooked and chopped
- 1/2 cups - chopped onions sauteed
- 1 tablespoons - chopped fresh parsley
- 1 teaspoons - dried dill weed
- 4 - eggs
- 1 cups - milk
- 1/3 cups - whole wheat bread crumbs
- 1/2 cups - shredded Swiss cheese or other natural cheese
- 1 pounds - fresh carrots cooked
- 1/4 cups - milk
- 1 tablespoons - butter
Directions:
For Cake:
Combine the spinach, onions, parsley and dill, and set aside.
Beat the eggs, then add the milk, bread crumbs and cheese. Mix with spinach and pour into prepared pan or pans. Set in a pan of water.
Bake at 350 degrees F 30 to 40 minutes or until set. Unmold. Spread with carrot topping.
For Carrot Frosting:
Except for 1 carrot to be used for garnish, puree the carrots with the milk and butter. Spread over spinach cake.
Garnish with sliced carrot and sprinkle parsley on top.
This can be served hot, warm or cold.
