Spinach Flan

Ingredients:

  1. 4 ounces - pastry shell
  2. 1 pounds - fresh spinach OR 1-1/2 pkg frozen spinach
  3. 8 ounces - cottage cheese
  4. 3 - eggs
  5. 1 ounces - grated Parmesan
  6. 4 tablespoons - cream
  7. - salt and pepper to taste
  8. - a pinch of nutmeg

Directions:

Bake pastry shell.

Cook spinach; drain thoroughly.

Sieve cottage cheese; add spinach, eggs, Parmesan and cream. Mix well; season with salt and pepper and nutmeg.

Spoon into pastry shell, spreading evenly over pastry and bake for 30 minutes.
