Steamed Lemon Chicken

Ingredients:

  1. 1 - large lemon
  2. 1/4 cups - all-purpose flour
  3. 1 teaspoons - salt
  4. 1/4 teaspoons - pepper
  5. 1 - fryer chicken quartered or cut up
  6. 1 tablespoons - oleo
  7. 2 tablespoons - vegetable oil
  8. 2 cloves - garlic
  9. 1/2 teaspoons - thyme
  10. 1/4 cups - white wine
  11. 2 tablespoons - chopped chives

Directions:

Grate rind from lemon; reserve 1 teaspoon lemon juice.

Coat chicken pieces in a bag (with flour, salt and pepper).

Brown in butter and oil. Add lemon rind and juice, garlic, thyme and wine.

Cover tightly and simmer for 30 minutes. Stir in chives and serve.
