Ingredients:

  1. 6 - medium zucchini
  2. 1/4 cups - olive oil
  3. 1/2 cups - chopped onion
  4. 1 tablespoons - minced garlic
  5. 1/2 pounds - cooked ground meat optional
  6. 1/4 cups - chopped ham optional
  7. 2 tablespoons - tomato paste
  8. 1 - egg beaten
  9. 2/3 cups - bread crumbs
  10. 1/2 cups - Parmesan cheese
  11. 2 tablespoons - chopped parsley
  12. 1 tablespoons - oregano
  13. - salt and pepper
  14. - tomato sauce for layering in bottom of pan

Directions:

Cut zucchini in half lengthwise and scoop out pulp; chop pulp and reserve.

Saute onion in oil; add zucchini pulp and garlic and cook 5 minutes.

Pour 1/4 inch of tomato sauce on bottom of baking dish. Place zucchini shells in baking dish.

Mix together onion and zucchini mixture with meat, if using, tomato paste, egg, parsley, oregano, salt and pepper.

Fill cavities with mixture. Sprinkle with Parmesan cheese and bread crumbs and dot with butter. Bake at 350 degrees F for 30 minutes.
