Sunrise Casserole

Ingredients:

  1. 30 ounces - country style hash browns
  2. 9 - eggs
  3. 3 cups - milk
  4. 1 1/2 teaspoons - ground mustard
  5. 1 teaspoons - salt
  6. 1/2 teaspoons - pepper
  7. 2 cups - shredded Mexican style cheese
  8. 1/2 cups - sweet red pepper diced
  9. 1/3 cups - green onions thinly sliced
  10. 2 cups - salsa or picante sauce
  11. 24 ounces - sausage links

Directions:

Pre-heat oven to 375°F
Cook sausage, cool slightly and slice into 1/4 in coins. In a large bowl, combine eggs, milk, mustard, salt, and pepper. Add the hash browns, sausage, cheese, sweet red pepper and green onions, mix well. Pour into a greased 13x9x2 baking dish. Cover and refrigerate overnight. Remove from the refrigerator 30 mins before baking. Bake, uncovered, at 350°F for 65-70 mins or until set and golden brown and an internal temperature of 165°F is reached. Let stand 10 min before serving. Serve with salsa or picante sauce if desired.
