Ingredients:
- 3 - large sweet potatoes
- 1/4 cups - raisins
- 1/2 cups - sesame seeds
- 1/2 teaspoons - cinnamon
- 1 cups - cranberries
- 1/2 cups - English walnuts
- 2 tablespoons - honey
Directions:
Cook or bake 3 whole sweet potatoes in their jackets until just tender. Cut in half, lengthwise. Spoon out the centers of the sweet potatoes into a bowl, leaving a shell about 1/4-inch thick.
With the steel blade in place, process the cranberries in a food processor with 3 five second on/off turns. Add the raisins, walnuts, sesame seeds, honey, cinnamon, and the reserved sweet potatoes and process for 2 five-second on-off turns or until ingredients are well combined.
Mound the mixture in the sweet potato skins, and place the boats in a baking dish. Bake at 350 degrees F for 20 minutes.
