Ingredients:

  1. 1 - egg separated
  2. 1 teaspoons - pure vanilla extract
  3. 1 1/4 cups - flour
  4. 2/3 cups - mixed nuts chopped
  5. - seedless raspberry jam
  6. 1/2 cups - butter (1 stick)
  7. 1/2 cups - sugar

Directions:

Beat butter, sugar, egg yolk and vanilla until light and fluffy. Stir in flour; gather dough in ball, wrap in plastic wrap and chill until firm.

Roll dough into balls and dip in slightly beaten egg white, then roll in nuts.

Place on ungreased cookie sheet 1 inch apart. Put a thumbprint in each cookie, using thumb or end of large wooden spoon.

Bake at 350 degrees F for 15 to 20 minutes. Cool and fill indentations with raspberry jam.
