Tomato and Onion Tart

Ingredients:

  1. 1 - pie crust
  2. 3 tablespoons - olive oil
  3. 3 - large onions thinly sliced
  4. - pepper
  5. 1 1/3 cups - crumbled goat cheese
  6. 1/2 cups - mozzarella cheese
  7. 1/2 cups - Parmesan cheese
  8. 1 pounds - tomatoes thinly sliced
  9. - fresh basil

Directions:

Roll pie crust out thin and place in greased tart tin. Bake for 25 minutes.

Cook onion in 2 tablespoons of oil until translucent. Spread on tart.

Cover with goat cheese. Cover with sliced tomatoes.

Sprinkle on cheeses, salt and pepper. Drizzle with remaining tablespoon of oil.

Place under broiler until cheese melts. Garnish with fresh basil.
