    You may want to make this in the morning, so that it has time to chill in the refrigerator until you are ready to eat it. You will need to eat this within a few days because it will not freeze well.

Ingredients:

  1. 2 - chicken breasts
  2. 1/2 cups - Plain Greek Non-Fat Yogurt
  3. 1 - lime (juiced)
  4. 1 teaspoons - curry powder
  5. 1 cans - mixed tropical fruit (unsweetened) You can also use fresh/frozen mango/pineapple, papaya, etc.
  6. - Salad Greens (for tropical chicken salad)
  7. - Wraps or Tortillas (optional for chicken salad recipe) I recommend whole wheat.

Directions:

Preheat oven to 350.

Line a cookie sheet (one with a raised edge) with parchment paper.

Get out all your cookware: cutting board, knife

Get out all your ingredients and set them out on the counter in front of you.

Slice chicken down center making two thinner breasts out of each piece of chicken.

Arrange four chicken pieces on the parchment lined cookie sheet. Rub each piece with a little bit of canola oil and season both sides with a little salt and pepper.

Bake for 15 minutes.

While Chicken is baking... In a small bowl, stir together yogurt, lime juice and curry powder.

Open and drain the can of tropical fruit.

When chicken is done cooking, place each breast back on the cutting board and cut into bite size pieces. Allow chicken pieces to cool sufficiently.

Combine chicken pieces, tropical fruit and dressing and stir well. Serve over salad greens for a hearty summer salad. You can also mix in the salad greens and eat as a wrap for a quick snack or easy lunch.
