Turkey Lemon Piccata

Ingredients:

  1. 1/3 cups - flour
  2. 1/2 teaspoons - salt
  3. 1/2 teaspoons - freshly ground pepper
  4. 4 - turkey cutlets sliced in half across grain
  5. 2 tablespoons - olive oil
  6. 1 cloves - garlic minced
  7. 1/2 cups - chicken stock
  8. 1 tablespoons - capers
  9. 1/2 teaspoons - sugar
  10. 1 - lemon (juiced and grated zest)
  11. 2 tablespoons - butter
  12. 1 tablespoons - chopped parsley
  13. - capers for garnish

Directions:

Combine flour, salt and pepper. Dredge cutlets in mixture.

Saute cutlets in oil until golden brown (3 minutes per side); remove and reserve.

Add garlic to pan, brown and add chicken stock. Add remaining ingredients and boil 1 minute.

Return cutlets to pan and heat through. Garnish with capers.
