    If you like your chili with a little more or less heat or overall spice, feel free to increase or decrease the amount of spices. Also if you like your chili a little bit looser, feel free to add any type of cooking broth.

Ingredients:

  1. 1 tablespoons - olive oil
  2. 1 cups - white onion diced
  3. 1 cups - celery diced
  4. 1 tablespoons - chili powder
  5. 2 teaspoons - cumin
  6. 1 1/2 teaspoons - paprika
  7. 1 teaspoons - oregano
  8. 1 cans - black beans rinsed
  9. 1 cans - white beans rinsed
  10. 1 cans - kidney beans rinsed
  11. 2 cans - tomatoes diced
  12. 3 leaves - bay leaves
  13. - salt
  14. - pepper

Directions:

1. Pour the olive oil into a large stock pot and then turn on heat to a medium to low flame. Allow the oil to heat up slightly before adding vegetables.
2. Add the onion and celery and cook until translucent or tender, about 7-10 minutes.
3. Once the vegetables are cooked add all the dry ingredients: chili powder, cumin, paprika, oregano. Heat the spices with the sauted vegetables until vegetables are evenly coated and spices have become aromatic (you can start to smell them as they are cooking).
4. Add the diced tomatoes, with the juice, and the rinsed beans.
5. Add the bay leaves and stir the mixture.
6. Allow the chili to simmer on low heat stirring occasionally for about 30-60 minutes.
7. Once the chili has simmered for the allotted time, remove the bay leaves and place into bowl for consumption.

To complete the meal, do not forget to serve with your favorite side. These can range from some toasted bread, tortilla chips, crackers, or even cornbread. Or you can top your chili with some avocado, sour cream or shredded cheese.
