Vodka Glazed Pumpkin Cookies

Ingredients:

  1. 2 1/2 cups - all purpose flour
  2. 1 teaspoons - baking powder
  3. 1 teaspoons - baking soda
  4. 2 teaspoons - cinnamon
  5. 1/2 teaspoons - nutmeg
  6. 1/2 teaspoons - cloves
  7. 1/2 teaspoons - salt
  8. 1 sticks - butter softened
  9. 1 cups - sugar
  10. 1/2 cups - brown sugar
  11. 1 1/2 cups - pure pumpkin
  12. 1 - egg
  13. 1 teaspoons - vanilla
  14. 1 cups - powdered sugar
  15. 1 1/2 teaspoons - hot water
  16. 1 1/2 tablespoons - pumpkin pie vodka
  17. 1/8 teaspoons - vanilla
  18. - Pecans optional, garnish

Directions:

For Cookies:

Preheat oven to 350 degrees F. In a large bowl, combine all of your dry ingredients; set aside.

In a separate bowl, cream together the butter and both sugars (white and brown). If you are using a stand mixer, you will want to scrape down the sides.

After it's mixed up really well, add your pumpkin, egg and vanilla. Stir in your dry ingredients until it's all combined. Don’t overthink (over mix) this.

Drop the cookie mix by spoonful onto your cookie sheet and bake for 13-15 minutes. Cool on a wire rack.

For the Glaze:

Mix your powdered sugar with the vodka and vanilla. Add the hot water last. Whisk until smooth. Drizzle over the tops of the cookies and then add some pecans (if desired).
