Ingredients:
- 1 pounds - watermelon seeded & cut into bite size balls or thin slices
- 1 tablespoons - pure maple syrup
- 2 teaspoons - sherry or white wine vinegar
- 1 tablespoons - chopped fresh basil
- 1/2 cups - salted pistachios
- 5 ounces - baby arugula
Directions:
Seed 1 lb watermelon and cut into bite-size balls or thin slices. Whisk together 1 Tbsp pure maple syrup, 2 tsp sherry or white wine vinegar, and 1 Tbsp chopped fresh basil in large bowl. Add melon, ½ cup salted pistachios, and 5 oz baby arugula. Toss gently and serve immediately.
