Yellow and Green Noodles with Sweet Peppers and Sausage

Ingredients:

  1. 3 - large sweet red peppers
  2. 1/2 pounds - mild breakfast sausage cut in 1/2-inch pieces
  3. 1/4 cups - water
  4. 1/4 cups - olive oil
  5. 3 tablespoons - finely chopped onion
  6. 3 - ripe tomatoes peeled, seeded and coarsely chopped
  7. 1/4 teaspoons - salt
  8. - freshly ground pepper
  9. 2 cups - egg noodles
  10. 2 cups - green noodles
  11. 2 tablespoons - butter
  12. 2/3 cups - grated Parmesan cheese

Directions:

Quarter the peppers; seed. Cut into 1-inch pieces.

Cook sausage in water in a large skillet until water has evaporated. Continue cooking until sausage is browned; remove to bowl.

Drain fat from skillet; discard; add olive oil to skillet and heat. Saute onion until soft but not brown. Add tomatoes, salt, pepper and red peppers.

Simmer, stirring, until peppers are soft, about 6 minutes.

While sauce simmers, cook noodles, following label directions. Drain. Transfer to a warm bowl or platter.

Pour sauce over; add butter and toss. Add half of Parmesan; toss again.

Top with remaining cheese and pass the pepper mill, if you wish.
