Ingredients:

  1. 4 - medium zucchinis
  2. 1 pounds - ground chicken or turkey
  3. 1/4 teaspoons - salt
  4. 1/4 teaspoons - pepper
  5. 2 cloves - garlic minced
  6. 1 cups - pasta sauce
  7. 1/4 cups - grated Parmesan cheese
  8. 1/2 cups - shredded light mozzarella cheese

Directions:

Season the chicken with salt and pepper and brown.

When chicken is browned, reduce heat to low and add the garlic. Cook for 1 minute.

Add the pasta sauce and cook for 5 minutes.

While the chicken is browning, cut the zucchinis in half and scoop the seeds and center out of each zucchini to create a “boat”.

Place the zucchini in a baking dish that has been sprayed with cooking spray, cut side up

Spoon the chicken mixture into the zucchini boats and press into the boat.

Sprinkle the zucchini evenly with the parmesan and mozzarella cheeses.

Cover with foil and bake for 35 minutes.
