Notes:
Especially delicious with butter and applesauce when still warm. If frozen, heat again before serving.

Ingredients:
- 1 cups - Hain's "All Blend Oil" (safflower, soy, peanut & walnut)
- 2 cups - grated zucchini full cups
- 3 cups - all-purpose flour (or soy with mixed flours, such as barley)
- 1 teaspoons - vanilla
- 1 teaspoons - baking soda
- 1 teaspoons - baking powder
- 1 teaspoons - salt
- 1 teaspoons - cinnamon
- 1 cups - nuts (English walnuts)
- 3 - eggs
- 1 cups - sugar
Directions:
Beat eggs until light and fluffy. Add sugar, vanilla and oil. Blend well.
Stir in the zucchini. In a separate bowl, sift together the flour, baking powder, baking soda, salt and cinnamon. Blend into creamed mixture.
Fold in the nuts.
Bake in two greased, floured 9-by-5-inch loaf pans at 350 degrees F for 1 hour.
If not used at once, wrap in foil and freeze. When ready to use, reheat before serving.
