Zucchini Bread

Ingredients:

  1. 1 cups - Hain's "All Blend Oil" (safflower, soy, peanut & walnut)
  2. 2 cups - grated zucchini full cups
  3. 3 cups - all-purpose flour (or soy with mixed flours, such as barley)
  4. 1 teaspoons - vanilla
  5. 1 teaspoons - baking soda
  6. 1 teaspoons - baking powder
  7. 1 teaspoons - salt
  8. 1 teaspoons - cinnamon
  9. 1 cups - nuts (English walnuts)
  10. 3 - eggs
  11. 1 cups - sugar

Directions:

Beat eggs until light and fluffy. Add sugar, vanilla and oil. Blend well.

Stir in the zucchini. In a separate bowl, sift together the flour, baking powder, baking soda, salt and cinnamon. Blend into creamed mixture.

Fold in the nuts.

Bake in two greased, floured 9-by-5-inch loaf pans at 350 degrees F for 1 hour.

If not used at once, wrap in foil and freeze. When ready to use, reheat before serving.
